A grocery bunch is already a bundle of cuttings. The real question is whether its nodes are still alive enough to remember how to become plants.

For ngò ôm, the answer can be yes. This Vietnamese culinary herb is Limnophila aromatica, an aquatic or semi-aquatic plant whose stems root at their nodes. The Singapore National Parks Board lists herbaceous stem cuttings as a propagation method and notes that stem tops can make new plants.

That biological ability is not a guarantee for every bunch in the produce case. Harvesting, refrigeration, dehydration, bruising, and time away from the parent plant can leave a stem suitable for soup but unable to root. The experiment works best when it is allowed to return an honest no.

Begin at the label, not at the water glass

Ngò ôm is also called rice paddy herb. Its scientific name is Limnophila aromatica. The emergent form has slender stems and simple narrow leaves arranged in opposite pairs or whorls, usually with toothed edges. NParks describes a lemon-and-cumin-like culinary character and use in Vietnamese soups and other dishes.

Do not confuse it with rau răm, often called Vietnamese coriander or Vietnamese mint. Rau răm is Persicaria odorata, a different plant with different leaf markings and growth. Thai basil, mint, and culantro are different again. A store sign, package label, or confirmation from a knowledgeable produce seller should establish the starting identity. If the bunch cannot be identified confidently, cook it only according to the seller’s food guidance and do not turn it into an unlabeled plant.

The Flora of China treatment describes L. aromatica stems as rooting from the nodes and its leaves as opposite or arranged in whorls of three. Those two features give the experiment its map. Roots belong at nodes, not along any random piece of green stem.

Choose stems that still have a future

At the market, look for a fresh bunch with firm stems, intact growing tips, and several visible nodes. A node is the point where a leaf or set of leaves meets the stem. Reject propagation candidates with slime, widespread blackening, mold, a sour odor, or crushed nodes.

Pay attention to the cut ends without treating them as the only important tissue. A dried bottom can be recut, but a stem whose nodes and tip have collapsed has lost the parts most likely to respond. Select several candidates rather than making the entire result depend on one stem.

Historical specimens in the Bishop Museum Plants of Hawaii collection include L. aromatica from Asian markets in Honolulu. One market specimen was recorded as tip cuttings with roots appearing at their lower ends. That is unusually direct evidence for the grocery-bunch idea, but it still documents a possibility rather than a universal success rate.

Set up a clean node test

The first stage needs a clean vessel, potable water, clean scissors, and bright warmth. It does not need fertilizer, a rooting hormone, or a crowded jar.

  1. Rinse the outside of the stems under plain running water and place them on a clean surface.
  2. Choose a healthy tip section with more than one node.
  3. Make a clean cut below a lower node.
  4. Remove only the leaves that would otherwise sit below water, keeping the upper foliage intact.
  5. Stand the cutting so one or two bare lower nodes are submerged while the leafy tip remains in air.
  6. Keep several cuttings separated enough to inspect their stems and water.

The Missouri Botanical Garden’s cutting guide illustrates the general logic of cutting below a node and removing lower foliage before placing a cutting in moist conditions. Ngò ôm adds one major difference from many ordinary herbs: its eventual root zone should remain consistently wet.

Place the vessel in bright light without pressing the leaves against hot glass. Replace cloudy water, rinse the vessel, and keep the submerged portion free of fallen leaves. More water is not automatically better. Submerge the nodes intended to root, not the entire cutting.

Let the cutting issue its own report

A calendar cannot decide whether the test worked. Read the tissue.

Promising evidence: The stem remains firm, the tip stays active, and pale roots emerge from a submerged node. New growth above water strengthens the case that the cutting is functioning.

Ambiguous evidence: The leaves remain green but no roots appear. Stored water and carbohydrates can keep cut foliage presentable for a time. Continue observing only while the water and stem remain clean.

A failed cutting: The base turns translucent or dark, the stem collapses, or odor and slime develop. Discard it. Recutting higher and moving decay into a clean glass can contaminate the next trial without restoring dead nodes.

A false start: A tiny pale bump forms but never extends while the upper stem declines. Wait for clear root growth and active foliage rather than potting at the first color change.

There is no responsible promise that roots will appear in a fixed number of days. The point of the test is to separate living propagation material from an edible bunch that has reached the end of its plant life.

Transfer roots into a wet crop, not ordinary herb care

Once several roots are extending and the tip remains healthy, move the cutting into a container that can stay consistently moist. NParks describes L. aromatica as a fast-growing plant of fertile moist to waterlogged soils, with full sun to semi-shade. A water-retentive inner container inside a stable outer basin can supply wet conditions while keeping the crop controlled and easy to inspect.

Use fresh growing medium and set the rooted nodes at the surface level they occupied in water. Keep leaves above the medium. Water gently so the new roots make contact without being crushed. During the transition, do not let the root zone dry hard. At the same time, remove decaying leaves and keep neglected, foul water from accumulating.

Increase light gradually as new growth appears. A grocery cutting has lived through harvest, transport, refrigeration, and rooting. Moving it directly into scorching sun adds another stress before it has built a working root system.

When the plant begins extending new stems, pinch or cut above a healthy node. The remaining nodes can branch, and the harvested tip can enter the kitchen. Keep the container near the work area rather than beside a natural pond or stream, and collect every loose cutting during cleanup.

Close the loop at the cutting board

The original bunch and later harvest are food only when the plant is correctly identified and the growing setup is managed for edible use. Do not serve material exposed to pet waste, questionable water, mold, or an unlabeled pesticide. Propagation success does not erase the plant’s previous handling history.

The U.S. Food and Drug Administration recommends washing hands and utensils, trimming damaged areas, and rinsing produce beneath plain running water. Soap and commercial produce wash are not recommended. Keep the clean harvest separate from raw meat and dirty propagation tools.

Ngò ôm is commonly added to soups, curries, sauces, and salads in Southeast Asian cooking. A home container is best suited to small aromatic harvests. Cut only sound tips, leave enough foliage for the plant to replace them, and use the kitchen’s demand to set the scale of the planting.

The experiment’s most satisfying outcome is not merely a jar full of roots. It is a complete chain: a named herb, a living node, a clean cutting, a wet but managed pot, and a small harvest that returns to the dish the grocery bunch was bought for.
