Three Dinners from One Produce Shop
This list makes three dinners for two people: curry udon, tofu with gai lan and rice, then tomato and egg with rice. Produce package sizes vary, so compare the basket with what your market sells and adjust quantities before checkout.
The produce basket
- 450 g ripe tomatoes
- 450 g gai lan
- 200 g brown button mushrooms
- 150 g onion
- 75 g carrot
- 5 scallions
- 15 g fresh ginger
Choose unbruised produce. Keep mushrooms, scallions and gai lan refrigerated at 40°F (4°C) or below, wash produce under running water before cutting it, and keep it separate from raw meat and seafood. The FDA’s produce guide explains those handling steps.
From the rest of the store, pick up 400–500 g frozen udon, 400 g firm or extra-firm tofu and 4 large eggs. Check the cupboard for 50 g Japanese curry roux, 750 ml unsalted vegetable broth, 2 cups dry white jasmine rice, neutral oil, Chinese light soy sauce, unseasoned rice vinegar, oyster sauce, sugar and salt. Cook the rice as two separate one-cup batches.
The recipes use up to 7 tablespoons neutral oil, 1 tablespoon plus 2 teaspoons soy sauce, 2 tablespoons oyster sauce, 1 teaspoon rice vinegar and 1¼ teaspoons optional sugar across the three nights. Curry roux, oyster sauce and soy sauce can overlap in wheat, soy, shellfish or other allergens, so check the actual packages rather than relying on the dish name.
Night one: mushrooms into curry udon
Cook curry udon with mushrooms and carrots first. It makes two generous bowls and uses the mushrooms, onion, carrot and one scallion. Follow the roux packet as well as the recipe; brands differ in salt, heat and ingredients.
Cooking the most perishable sliced produce first keeps the rest of the week flexible. If the gai lan is already wilting or the tomatoes are fully ripe, switch the order of the remaining nights.
Night two: tofu, gai lan and rice
Cook one batch of jasmine rice. While it rests off the heat, finish the prep for pan-seared tofu with ginger scallion sauce. The tofu makes about two servings and uses the ginger and three scallions.
Make gai lan with oyster sauce after the tofu leaves the skillet. The greens make two to three side servings and need their own wide pot, but they cook quickly once the water boils. Serve both dishes with the fresh rice.
Night three: tomatoes and eggs
Cook a fresh batch of rice, then make tomato and egg stir-fry. It uses the tomatoes, four eggs and the final scallion and makes about two servings with rice.
Put away leftovers within two hours, or within one hour when the room is above 90°F (32°C). Divide them into shallow containers. Follow the rice cooling guide for leftover rice rather than leaving it in the covered saucepan.
Before leaving the shop
Check the quantities sold against the list. An extra scallion can go into eggs or noodles; extra ginger can be frozen in a small, well-wrapped piece. If the market sells a much larger bunch of gai lan, cook the full gai lan recipe and refrigerate the extra cooked portion promptly instead of letting raw greens languish in the drawer.
